Best Ever Oatmeal Cookies

Ok I thought I would start sharing with you some of my favorite recipes. These cookies in particular were inspired by someone very special to me. I often switch out the toppings and sometimes add dried cherries. But never raisins. I am not a fan.

Angie’s Famous Cookies

1/2 cup (1 stick) plus 6 Tbsp. Butter softened

3/4 cup firmly packed brown sugar

1/2 cup granulated sugar 

2 eggs

1 teaspoon vanilla

1 1/2 cups all purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 cup chocolate chips

1/2 cup caramel bits or white chocolate chips (your choice)

1/2 cup rough chopped walnuts

2 cups Quaker old fashioned oats uncooked

1 cup sweetened shredded coconut


Heat oven to 350 F

In large bowl, beat butter and sugars on medium speed until creamy.

Add eggs and vanilla beat well.

Add combined flour, baking soda, and salt.  Mix well.

Add oats, chips, walnuts and coconut.  Mix well.

Make round balls about 1.5 inch diameter and space apart 2 inches on uncreased cookie sheets lined with parchment paper.  

Bake until golden brown, approximately 16-18 minutes.  Cool 1 minute and then move to wire racks.  Cool completely.


Tips

Watch cookies towards the end, if you bake too long cookies get crispy.  Go with the longer time if you want the crunchy! I like them softish.

Sometimes I add in chopped dried cherries if I want a fruit aspect to them.  Delicious.  Just remove the caramel if you do this.

You can do any variety of the mix ins.  Just ensure your quantity is good so you get bits in all your cookies.
